Celeriac deserves a ton more credit. Low carb and low FODMAP, this root vegetable—which is in the celery family—is a great substitute for grains, potatoes, and other starches. It can be steamed and mashed, cubed and added to stews, or even spiralized for a pasta alternative. It’s also delicious slowly caramelized in bacon fat and served naked.

I could eat this straight from the jar, especially right when it's just done and still warm. Packed with nutrients, healthy fats, and a little protein, it’s delicious with eggs and veggies for breakfast or as a dressing on a lunch salad. The sautéed leeks make it rich and creamy.
